I was in Moldova a few months ago. I wanted to see the Turkish breakaway region. The guide I hired told me it was terribly boring and she would rather drive me to Odessa. She said there would be a little extra charge for the additional fuel, but that is it. She said she has taken many individual tourists and groups over there. I have been to Ukraine, but not Odessa. I would have gone, but I brought my 13 year old nephew with me and I think my family would have killed me when I got back. We spent five days with the guide and she took us into Transnistria, etc. She was absolutely wonderful and had a brand new reliable vehicle. I can pass her name and contact on if desired.
We made a quick cross border visit to Solotvyno, so if you are in Sighetu Marmației or seeing the Merry Cemetery, this might be an option. It seems like our guide had some small paperwork to do to allow driving over, but it must not have been much because it was his idea to go.
But this was in 2016, so have no idea what the current situation is like.

I have visited Romania and Eastern Europe during 2022 Ukraine-Russian Invasion War Summer time. But I haven't done that yet.

Lviv is not far from the Polish border and is one of the safest places in the country.
