Paradors in Spain

Have you ever stayed in a Spanish parador? If so, I’m planning a trip there in the fall and would love any advice you can give. I’m particularly interested in staying in castles and maybe monasteries, driving a tour for about 10-14 days, and maybe going into Portugal. Gracias, amigos!
